When applying for skilled independent migration how far back do you have
to go with employment references? I won't be requesting points for
specific work experience so do I just need to provide two years worth of
references to meet the basic 2 out of 3 years requirement? Or do I need
to provide refs for all my employment?

You normally just need to provide references for the time periods
that DIMIA are interested in for basic requirements, and points if
you need them.
However sometimes they may need more, in some cases where they may doubt
your work experience is really *skilled* or your work experience and
nominated occupation are different.
If a skill assessing body requires evidence of additional work
experience, this must also be covered by references.
