is there a guideline on how to prove the amount of job experience I have? if
say I work at company A for one year and company B for another year, and
both have NOC codes, can I put both in as experience so I can have more
points?

Is salary statements good enough to prove job experience?

If they're jobs that qualify you for points, yes.
