Hi. My parents are visiting Canada with a single-entry visitor visa
and are planning to have a short trip to US and then come back
directly to Canada before the expiration of their original Canadian
visitor visa. My understanding is that in such situation, they do not
need a new visitor visa to re-enter Canada. If that's the case, is
there any official link or document from CIC to confirm this??

Nope, but they have to fill out the waiver visa form (I forgot the
formnumber) for the U.S.

You are correct. They don't need a new visa. But there are some
requirements. Have a look at http://www.cic.gc.ca/english/information/faq/visit/visit-faq01.asp
(What is the difference between a single-entry visa and a multiple-
entry visa?) and read the exceptions for Single-entry visa
