What exactly do they check and at what points in the process? I assume
the police check in the early stage of the K1 is just to prove that
you've no convictions of being a mass murderer of something... but what
others are there?

Is there another in the K1 process before the Visa is issued? If so what
is checked then?

And then when the fiance arrives on the K1, and the marriage takes
place, the paperwork for AOS is filed. There's another check then right?
What is checked then? Is it a fresh check or do they go on the old check
from earlier?

If AOS is successful, are there any more or can the new-guy-to-the-
states finally breathe easy, safe in the fact that the men in black
probably aren't coming for him?

Yes.

Some visa applicants from certain muslim countries are required to have
a namecheck done by the FBI prior to visa issuance to check for
connections to terrorism.  Since you are from the UK, then you are not
subjected to this namecheck... at least not yet ;)

Yes, as part of AOS the FBI namecheck is done for everyone.  If you
had been required to have one done during the application process then
those results are only good for 4 months, after which time a new
search is done.

There is also the final removal of conditions to get thru approx 2
years later, but no new name check at that time.  For more information
about FBI namechecks, here is a link where the FBI explains the process
to congress:
