I'm kind of freaking out.  my I-485 etc was going swimmingly (prints
done all that) until i got a request for Initial Evidence in the form
of 'Proof of lawful admission to the US"

I'm Canadian, I came through on a land border, I got inspected, I
handed over my passport, and that was it.  They didn't stamp it.  I
have no I-94.  I have nothing.  I entered legally, watched him scan my
passport, but i have no PROOF that any of this happened.

Can anyone offer suggestions as to what the hell I'm supposed to do?

You need an I-94... That's your proof of lawful admission.
See a lawyer ASAP.
